When it is really hot and sunny, I crave salad- something cool and refreshing, with a great contrast of colours and flavours. I love to mix sweet and savoury, particularly if the ‘savoury’ is also salty. This salad really fits the bill.
Watermelon and Feta Salad (serves 2)
450g watermelon chunks
100g feta, cut into small cubes
100g cucumber, peeled, deseeded and sliced
Handful of mint leaves, shredded
1 tbsp. extra virgin olive oil
1 tbsp. red wine vinegar
- Place the melon, feta, cucumber and shredded mint into a bowl.
- Whisk together the oil and vinegar and toss into the salad. The feta will crumble and break down with the juices from the watermelon so should be done just before serving.
